With January in full swing, the first month of this year seems to be flying by. We will be using the slow cooker this week, to help make your workweek a bit less hectic. Grab your aprons, we are having a fix it and forget it supper!
Slow Cooker Potato Soup
1 – 30 oz bag of frozen hash brown potatoes 1 – 32 oz box of chicken broth 1 – 10 oz can cream of chicken soup 1 – 8 oz pkg cream cheese, cubed 3 oz bacon bits 1 cup shredded cheddar cheese Salt and pepper to taste To prepare: Put the potatoes in the slow cooker. Add the chicken broth, soup, and seasonings. Cook on low for 8 hours, or until potatoes are tender. After cooking for 7 hours, add cream cheese, and stir well. Serve individually, with bacon bits and cheese as topper.
Heavenly Hash Cake
2 sticks butter 4 T cocoa 2 C sugar 4 large eggs 1 ½ C flour ½ t vanilla 1 C chopped nuts 1 small bag miniature marshmallows To prepare: In bowl, mix the butter, cocoa, sugar, eggs, flour, vanilla, and chopped nuts. Pour into greased and floured 13 x 9 inch rectangular pan and bake at 350 until done. Remove from oven and while cake is still warm, pour marshmallows on top. Enjoy!
