Oven Porcupines
1 pound ground beef
½ cup uncooked regular rice
½ cup water
1/3 cup onion
1 teaspoon celery salt
1/8 teaspoon garlic powder
Pepper to taste
1 – 15 oz can tomato sauce
1 cup water
2 teaspoons Worcestershire sauce
Preheat oven to 350 degrees. Mix ground beef, rice, ½ cup water, onion, garlic powder, and pepper. Shape mixture into ball shapes. Place in baking dish. Stir together tomato sauce, 1 cup water, and Worcestershire sauce. Pour over meatballs. Cover with foil and bake for 45 minutes. Uncover and bake for 15 minutes longer.
String Bean Casserole
1 can mushroom or celery soup
¼ cup of sweet milk
1 can French fried onion rings
3 cups string beans, cooked and drained
Dash of salt and pepper
Alternate layers of string beans and half the onions. Mix milk, soup, salt, and pepper until smooth and pour over ingredients. Bake at 350 degrees for about 20 minutes or until bubbling. Top with other half of can of onion rings. Bake five minutes more.
Old Fashioned Rice Pudding
2/3 cup Minute Rice
2 ¾ cup milk
1/3 cup sugar
1 tablespoon butter
½ teaspoon salt
½ teaspoon vanilla
¼ teaspoon nutmeg
Cinnamon to taste
¼ raisins (if you prefer)
Combine Minute Rice, milk, sugar, butter, salt, vanilla, nutmeg, and raisins in a buttered 1 quart baking dish. Bake in 350 degree oven for 1 hour, stirring after 15 minutes and again when pudding is done. Sprinkle with cinnamon. Serve warm or chilled. Pudding thickens as it stands.
