WHAT’S COOKING?
Happy July Cass County! With the upcoming 4 th of July celebrations around the corner, let us each remember that this holiday is not just a cookout with family and friends. The 4 th of July has been celebrated since 1776, honoring the birth of American independence. Fireworks, friends, and of course food are just a few ways America rings in this beloved holiday. Grab your apron strings, these recipes will have you ready to party like it is 1776!
Fireworks Fizz Cranberry Drink
(non-alcoholic)
3 (6 oz.) cans pineapple juice
2 liter lemon lime soda
2 cups frozen cranberry juice
1 cup frozen raspberries
2/3 of water called for juice
1 cup frozen blueberries
Crushed ice
To prepare: In a one gallon pitcher, mix together frozen juice concentrate and water until completely combined. Add pineapple juice and stir well. Add chilled lemon lime soda to the punch mixture. Serve over crushed ice and garnish with frozen berries. Enjoy!
4 th Fruit Salsa
1 cup blueberries
1 cup diced strawberries
1 cup jicama (peeled and diced)
¼ cup diced red onion
¼ cup diced cilantro
1 juiced lime
Salt
To prepare: Combine all ingredients and add salt to taste. Let fruits and veggies rest in bowl for approximately 20 minutes before serving. You may serve with regular white corn tortilla chips or for a special touch, cinnamon and sugar dusted chips. Enjoy!
