Irish Soda Bread
4 c. sifted flour
½ t. baking soda
3 t. double action baking powder
1 c. seedless raisins
1 t. salt
1 t. caraway seed
2 c. buttermilk
To prepare: Combine flour, baking powder, salt and soda. Sift over raisins, mixed with caraway seed. Stir well and add buttermilk to make a soft dough. Turn onto a floured surface and knead gently 10 times, or until smooth and not sticky. Divide dough in half and shape into round leaves. Place on lightly greased baking sheet and bake at 350 degrees about 45 minutes, or until loaves are brown.
