WHAT'S COOKINGS?

There is something magical about a warm bowl of soup. My grandmother used to swear by it to help cure a cold. “You have to feed a cold,” she would say. It also helps make the heart smile when homesick. There has been a time or two I have put this theory to test! This week I have three recipes for you to try. Grab your apron strings, soup pots, and ladle’s, let’s cook Cass County!

Hamburger Soup

1 lb. ground beef 1 cup Barley 2 large carrots, sliced 2 bouillon cubes 2 large ribs of celery pepper, to taste 1 large onion 2 tbsp. dried parsley 2 – 1 lb. cans chopped tomatoes 6 cups water To prepare: Brown meat in a large pot and drain. Add remaining ingredients. Simmer 1 hour, until barley is fully cooked.

Cheesy Potato Soup

1 cup sliced carrots ½ cup flour 1 cup chopped celery 3 to 4 cups milk ½ cup chopped onion 8 oz. Cheese Whiz 5 cups potatoes, diced 1 pt. half and half 2 chicken bouillon cubes salt and pepper to taste 1 stick margarine To prepare: Boil carrots with bouillon cubes and water about 10 minutes, then add the rest of the vegetables. Cook until the potatoes are done. Drain. Make cream sauce by melting margarine, and adding four, and mixing until smooth. Add milk, Cheese Whiz, and half and half. Heat until cheese is dissolved. Add vegetables and heat thoroughly. Salt and pepper to taste.

Quick Chowder

½ lb. bacon strips 1 can cream style corn ¼ cup onion, chopped 1 ½ lbs Yukon gold potatoes, chopped 1 can evaporated milk salt and pepper to taste To prepare: In a large skillet, cook bacon until crisp. Set aside. Reserve 1 ½ teaspoons of grease drippings, add onions and cook until tender. Place potatoes in a large saucepan; add water to cover, bring to a boil over high heat. Reduce heat to medium; cook uncovered 10-15 minutes or until tender. Drain, reserving 1 cup potato water. Add corn, milk, salt, pepper, potatoes and reserved potato water to saucepan. Stir in bacon and onion. Enjoy!
