The temperature is dropping, we have nice breezes blowing through Cass County. How wonderful is this time of year? With cooler weather knocking on our door, I like to create a quick, no fuss dinner. Tortilla Soup is on the menu with a cool treat everyone is sure to love!
Sassy Tortilla Soup
Onion Red and yellow bell pepper 4 chicken breasts 1 can of Rotel, diced 1 can of whole tomatoes Taco Seasoning (one packet of any kind you choose) 1 can of black beans Cumin (add to taste) Salt and Pepper Chicken broth 1 lime Dice up: onion, red and yellow bell pepper Place chicken breasts directly into slowcooker. Sprinkle Packet of Taco Seasoning, Chili powder, Cumin, Salt, and Pepper. Add onions, and both diced bell peppers. Top with Rotel tomatoes and Whole tomatoes. Add chicken broth till it gets juicy. Add drained and rinsed can of black beans. Put lid on cooker, at high, for 4-5 hours. After cooking, shred chicken and serve with optional cheese, sour cream or tortilla chip strips. Squeeze lime juice on top and enjoy! Ole’!
Nilla Pudding
3 large egg yolks 9 tablespoons sugar 3 tablespoons cornstarch 3/8 teaspoon fine sea salt 3 cups whole milk 3 tablespoons unsalted butter (room temperature) 1 ½ teaspoons vanilla To prepare: In a small bowl, whisk egg yolks with ¼ cup milk until well combined. Reserve. In a 3 quart saucepan, whisk together sugar, cornstarch, and salt, then slowly whisk the cold milk. Over medium heat, stir constantly until simmer. Ladle ½ cup of the hot pudding into the egg yolks and whisk rapidly. Repeat 2 times. Now add the egg yolk mixture back into the saucepan. Lower the heat to medium-low and continue stirring the pudding until it thickens (about 3 minutes). Remove from the heat and stir in the butter and vanilla until the butter is melted. Immediately pour into serving dishes. Let cool and refrigerate 2 hours. Top with whipped cream (optional).
