WHAT'S COOKING?
Howdy, my fellow Lindenonites! If you are looking for a quick and easy supper, have I got something special for you! This week’s recipe is submitted by Julie A., and it is a lemony one-pan noodle, sausage, and broccoli dish. For dessert, a beloved favorite, pecan pie! So tie those apron strings and get to cooking Cass County!
Lemon Garden Pasta
1 lb. fresh spicy Italian turkey sausage, casing removed 1 large onion ½ tsp. table salt 3 large garlic cloves, minced 1/8 tsp. crushed red pepper flakes 4 cups canned chicken broth 8 oz. orecchiette noodles 2 cups chopped broccoli ¼ cup grated parmesan cheese, divided 2 tbsp. fresh lemon juice 1 tbsp. lemon zest 1 cup halved grape tomatoes 1/3 cup chopped fresh basil Prepare a large nonstick soup pot with cooking spray, heat over medium high heat. Add sausage and cook, stirring often and break apart sausage pieces with a wooden spoon, until well browned. Remove sausage to a bowl. Add onion and salt to pot; cook stirring until onion is softened. Add garlic and hot pepper flakes; cook, stirring, for 1 minute. Add broth; bring to a boil over high heat. Add pasta; cook, stirring until pasta is al dente. Stir in cooked sausage, 3 tbsp. Parmesan, lemon juice, and lemon zest; garnish with tomatoes, basil and remaining Parmesan.
Pecan Pie
4 large eggs ¾ cup sugar 1 T. flour 1 ¼ Karo syrup Pinch of salt 1 tsp. vanilla 2 cups pecans Beat eggs well, mix flour and sugar and add to eggs. Add other ingredients in order given. Pour into uncooked 9” pie shell. Do not prick pie crust! Cook at 350 degrees for 10 minutes, and then at 300 degrees for about 50 minutes, until pie is firm in the middle.
