WHAT'S COOKING?

Hey ya’ll! This week’s recipe originated from Scotland but has been given a Texas Twist! Grab your apron and let’s do the Spiky Chicken! Feel free to dance in your apron if you please! To drink, we have a Mangicot Lassie. A perfect pairing with the Spiky Chicken.

Spiky Chicken

2 lbs chicken (cubed) 1 8 oz. cream cheese (cubed) 1 dash salt 2 dashes Pepper 1 tsp basil 4 basil leaves for garnish 1 ½ tbs smoked paprika 1 tbsp tomato paste 2 cloves of diced garlic Olive oil (to coat pan) ½ cup milk 2 cups rice To prepare: Over medium heat, add garlic to olive oil, salt, pepper, paprika and basil. Sauté until brown, add chicken and add cubed cream cheese, ½ cup milk, tomato paste, and ½ tbsp smoked paprika. Cook till cream cheese melts and consistency is smooth and creamy, stirring frequently. Serve on top of rice with basil leaf as garnish. Enjoy!

Mangicot Lassie

1 cup plain yogurt ½ cup milk 1 mango 1 apricot 1 cup mango juice 4 oz mango pulp 1 tbsp ground cardamom 1 -2 cups ice To prepare: Blend all ingredients and serve. Enjoy!
