Time to take advantage of those bright, colorful and tasty summer garden veggies. Grab a basket, pick a few, and don’t forget your apron! This week we have a great pasta veggie dish you and your family will love.
Angel Hair Pasta
2 tbsp. olive oil
1 c. finely diced mushrooms, yellow squash, and zucchini (1/4 inch pieces)
½ c. finely chopped onion
14 ½ oz. can Italian seasoned chunky tomatoes (undrained)
8 oz. can of tomato sauce
1 tsp. dried oregano
¼ tsp. garlic powder
12 oz. pkg. angel hair pasta (uncooked)
½ c. grated cheese
To Prepare: In a large skillet, heat oil, add mushrooms, squash, zucchini, and onion. Cook for 5 minutes. Stir in tomatoes, tomato sauce, oregano and garlic powder. Heat to boiling, then reduce heat. Simmer, covered, for additional 5 minutes. Cook pasta according to package directions and drain. Stir ½ cup cheese into sauce and toss with pasta. Sprinkle with remaining cheese. Enjoy!
