WHAT’S COOKING?

Hello, my fellow Lindenites. I hope everyone is safe and well. These weeks shared recipes are from my friends at Focused Care of Linden. Terri Coe is known for her Cha Cha Chicken and spaghetti, and who can have a dinner like that without a bit of sugar, Easy Peach Cobbler to the rescue! We have plenty of recipes, from start to finish. Grab those apron strings and let’s get to cooking Cass County!

Sweet Broccoli Salad

1 head of broccoli, chopped

1 head of broccoli, chopped 1 head of cauliflower, chopped

1 head of cauliflower, choppe 1 lb. of bacon, cooked

1 cup shredded cheese

1 cup mayo

1 cup sour cream

½ cup sugar

½ teaspoon salt

To Prepare: Mix broccoli, cauliflower, only a half-pound of the bacon (reserve other half) and shredded cheese into a large bowl. In a small bowl, mix mayo, sour cream, sugar and salt until combined well. Pour mayo mixture over mixture and stir well. Chill before serving. Serve with reserved bacon strips as garnish.

Cha-Cha Chicken Spaghetti

** For this recipe, the sizes and proportions are to taste**

Whole chicken, boiled and deboned

Large can of Cream of Mushroom

Large can of Cream of Mushroom

1 pkg. spaghetti noodles

Block of Velveeta Cheese, cubed

1 green bell pepper, diced (large or small)

Small jar of pimentos

1 yellow bell pepper, diced (large or small)

Cavenders Seasoning

To Prepare: In a large bowl, add pasta, cream of mushroom, bell peppers and celery. Add Chicken an pimentos. Mix well. Add desired amount of Velveeta cheese. (If dry, add broth from chicken.) Mix well. Sprinkle generously with Cavenders Seasoning, to desired taste. Pour into large casserole dish, cook at 35 degrees for about 45 minutes. Add shredded shar cheddar cheese to top, if desired.

Easy Peach Cobble

1 cup milk

1 cup self-rising flour

1 cup self-rising flour cinnamon

1 cup sugar

1 large can of peaches

To Prepare: Mix flour, sugar, and milk. Drain peaches, and set juice aside. Mix in peaches, sprinkle cinnamon to top. Bake at 175 till golden brown. Add remaining peach syrup to top, if desired.
