WHAT’S COOKING?

Greetings Cass County! As we are in a difficult and trying time, comfort food deemed appropriate. This week we have a White Chicken Chili from Makala Burrow. This is an easy and hearty meal that will have the family coming back for seconds. For those with a sweet tooth, a No Bake Cookie solution is coming your way! Grab your skillet and apron; let’s get to cooking Cass County.

Come Back White Chicken Chili

3-4 chicken breasts, cooked and chopped

1 onion, sautéed in chicken broth

3 cans of white beans

3 cans of tomato sauce

2 cans of Rotel tomatoes

2 cups of chicken broth

1 4oz. can of chopped green chili peppers

2 teaspoons ground cumin

1 teaspoon dried oregano

1 c. shredded Monterey Jack cheese

Garlic, salt, pepper, chili powder to taste

To Prepare: Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion (in chicken broth) until tender. Then mix Rotel tomatoes, chili peppers, cumin, oregano and other spices, to taste. Continue to cook and stir adding in the chicken broth, chopped chicken breasts, and beans. Simmer 15-20 minutes, stirring occasionally. Remove from heat and garnish with cheese on top. Enjoy.

No Bake Cookies

2 ½ cups sugar

3 c. oatmeal

8 tbsp. butter

½ c. peanut butter

¼ c. cocoa

½ tsp. vanilla

½ c. milk

To Prepare: In a saucepan over medium-low heat; mix together the sugar, butter, cocoa, and milk until it forms a syrup. Add oatmeal and stir well. Add peanut butter and stir in vanilla. Stir mixture well. Drop by the spoonful onto wax paper and let cool.
