Happy New Year 2020!

WHAT'S COOKING

The time has come to usher in not only a new year, but a new decade as well. It is with great hope that 2020 is a momentous and prosperous year for all of Cass County. New Year, new recipes, and this week’s recipes are sure to delight. Our recipes this week were submitted by Ronnie Dalrymple, of Bear Creek. Nestled in a beautiful piece of Cass County, down a country road, Chef RLD was kind enough to share his special recipes to start the New Year off right! Everyone has their own superstitions to ensure fortune in the upcoming year, and Ronnie’s are to have cabbage for money and peas for luck. On the menu this week are Kickin’ Cabbage and Peas with Carrot Cake and Cream Cheese Icing for dessert. Grab those apron strings; we are cooking Bear Creek style!

Kickin’ Cabbage

One Large Cabbage head 2 Large Onions, chopped 1 Tbsp. Webber Garlic Powder 1 Tbsp. Seasoning Salt or Tony Cachare’s 32 Oz. Swanson Chicken Broth One Stick of Butter Optional: Diced Rotel Tomatoes

To Prepare: Cut the core out of the cabbage and cube. Boil in Chicken Broth in large stockpot. Add chopped onions and simmer down, until tender. Add butter, garlic powder, seasoning salt, to taste. As an optional kick, diced Rotel Tomatoes make for a hearty meal.

Kickin’ Peas

2 pkgs of 1 lb. Black Eyed Peas Half stick of Butter 32 Oz. Swanson Chicken Broth 2 Tbsp. Tony Cachare;s Original Creole Seasoning 1 large onion, chopped Ham Hock A pinch of Italian Seasoning Optional: Diced Rotel Tomatoes

To Prepare: Pour entire bottle of chicken broth into a crockpot. Rinse peas and dry very well. Add to crockpot with onion, ham hock, and seasonings. Cook on high for 6 hours, stirring every so often. For a punch, add diced Rotel tomatoes.

Carrot Cake

2 Cups Flour 2 ½ Cups Sugar 2 Tsp. Cinnamon 4 Eggs 1 Tsp. Vanilla 3 Cups Grated Carrots, one pound 1 ½ cup oil

Icing

8 Oz. Cream Cheese 1 Stick of Butter 4 Cups Powdered Sugar 1 Tsp. Vanilla 1 Tsp. of Lemon Juice 1 Tsp. of Cinnamon

To prepare: Cake: Combine all ingredients in a well-greased pan and bake at 350 for 45 minutes to 1 hour. Set aside to cool before icing. Icing: Mix all ingredients and ice on cake, as desired.
