As we march forward into the month of March, winter is holding back and spring is, well, springing forward. Spring means meals on the lighter side, and one Southern dish sure to please any crowd is Tuna Croquettes with a nice Tartar Sauce on the side. Don’t forget the sweet tea!

This week’s submission is from a long-time resident of the Atlanta area, Marlana Gilmore Yates. Marlana whips this recipe up for her family and they all come back around for seconds! When she is not cooking, she enjoys spending time with her three children, and two granddaughters.

Marlana has transformed what began as a hobby and come full circle, creating her own photography business, Marlana’s Heart Photography. I have known Marlana for many, many years, and she is one of the sweetest people you will ever meet! Truly blessed are we for her to share one of her family’s favorite meals with all of Cass County. Tuna Croquettes

3 cans of tuna (or more depending on amount needed to serve)

Half sleeve of saltine crackers (or more, to preference)

1 diced egg per can of tuna

Tony Cachares seasoning (to preference)

To Prepare: In a mixing bowl combine the tuna, and diced eggs together. Crush saltine crackers into bowl and shake a generous amount of Tony’s, to taste. Form into patties and fry. Enjoy!

Tartar Sauce

1 cup mayonnaise

2 teaspoons sweet pickle relish

1 teaspoon dill pickle juice

1 teaspoon lemon juice

Sprig of dill weed

Minced onion

Dash of lemon pepper

To Prepare: Stir the mayonnaise, relish, pickle and lemon juice together in a bowl. Combine the minced onion to bowl, a dash of lemon pepper seasoning, and lastly, a sprig of dill weed. **For a healthier alterative, swap the mayonnaise for plain yogurt.
