The Thanksgiving holiday is upon us. Regardless if your Thanksgiving dinner is for one or forty-one, it is a time of remembrance and thankfulness. I encourage everyone to pull up a chair and put down the cell phones. Actually converse with one another, catch up on happenings and discuss dreams of the future. As we express our gratitude for the blessings we have received, and praise those yet to come, also remember those who are less fortunate. If possible, invite someone who will be alone this holiday season, or drop them by a plate of food. Once everyone has partaken in the holiday spread, what to do with those leftovers? I have just the solution!

Thanksgiving Casserole

4 cups prepared stuffing, divided 4 cups chopped cooked turkey ¾ cup Hellman’s Real Mayo, divided ¼ cup fresh whole berry cranberry sauce 2 cups mashed potatoes 1 ½ cups Shredded Mozzarella Nonstick cooking spray Fresh cranberries for garnish (optional) Directions Preheat oven to 375. Spray an 8 inch baking dish with cooking spray. Spoon half of the stuffing and spread evenly, top with turkey. Combine cranberry sauce with ¼ cup of the Hellman’s mayo, and then spread evenly over turkey. Combine the remaining mayo with mashed potatoes and cheese in a large bowl. Spread evenly over other ingredients and top with remaining stuffing. Bake 40 minutes or until hot and bubbling in center. Let stand 10 minutes, then garnish with fresh cranberries (optional) and serve.
