Hello All! Happy September! Now we are in the cusp of fall, and gearing up for those wonderful, savory and sweet recipes. This weeks recipe selections come from fellow Lindenonite, Anna Ellington. In her spare time from volunteering, Anna enjoys cooking for friends and happily shared these recipes, for all of Cass County to enjoy.
Skillet Basil
Creamed Chicken
4 chicken breasts (Fry till golden crisp)
¼ cup milk
¼ cup basil
1 cup heavy whipping cream
4 ounces sliced and drained pimento or tomatoes
3 tablespoons coconut oil ¼ cup crushed croutons or crackers
1/8 teaspoon pepper
½ cup chicken broth
In skillet, heat oil on Medium, dip and coat chicken in milk and croutons. About 10 minutes. Cook until juices run clean. Remove and keep warm. Add broth to the skillet. Cook on medium and stir in browned bits from skillet. Stir in cream and pimentos, Boil and stir for 1 minute, reduce heat, add basil and pepper, Stir until well-heated. Pour over chicken. Enjoy!
Cranberry-Apple Dump Cake
1 can Apple Pie Filling
1 can Whole Cranberry Sauce
1 Yellow Cake Mix
1 stick of Butter, cut into thin slices
1.2 cup Pecans, pieces
Pam Cooking Spray
Spray 16 x 8 pan with Pam. Layer bottom with Apple Pie Filling. Layer with cranberry sauce. Sprinkle half pecans over sauce and layer with dry yellow cake mix. Top with slices of butter, finish with ½ pecans. Follow directions on cake mix for baking! TaDa.
